Infusing herbs into fats is an ancient practice that our ancestors across all lineages utilized to create potent medicines from.
There is no shortage of ways to approach this practice showcased across the internet. Not all, but many of these approaches are misguided, miseducated and just simply fall flat. There is an immense amount of medicinal constituents burrowed within a plant's body, and it is rather crucial to take the time to get to know each plant's systems if one really wants to make the most of their oils. Simply dropping some dried flowers in a jar and pouring oil over them is a rather reductive way of approaching this practice, while doing the plant a massive disservice along the way.
I have found Kami McBride's approach to herbal infused oils to be the most comprehensive, effective and quite magical. She is considered the godmother of this practice for a reason. Not only is the proof in the final product, the infusion process itself naturally sets you up to be in deeper relationship with whatever plant you choose to work with. This method captures the essence of each plant's individuality in a manner that I've found other methods fall short of achieving.
However, this does not mean oils worthy of investing our time and money into making can not be made any other way. I spent many years producing wonderful oils before discovering Kami's alcohol method.
